01 - 2 large cucumbers, peeled and roughly chopped
02 - 1 packed cup fresh mint leaves
03 - 1 small handful fresh cilantro (optional)

04 - Juice of 2 limes (about 4 tablespoons / 2 fl oz)

05 - 2 tablespoons agave syrup (or honey/maple syrup as a substitute)

06 - 4 cups cold filtered water
07 - 1 cup ice cubes, plus additional ice for serving

10 - Sprigs of fresh mint
# Directions:
01 - Rinse cucumbers, mint and cilantro thoroughly. Peel and coarsely chop the cucumbers; measure the mint and set aside the cilantro if using.
02 - Add chopped cucumbers, mint leaves, cilantro (optional), lime juice, agave syrup, 4 cups cold water and 1 cup ice to a high-speed blender.
03 - Blend on high speed until the mixture is completely smooth and homogenous, about 45–60 seconds depending on blender power.
04 - Pour the blended mixture through a fine-mesh sieve or cheesecloth into a large pitcher, pressing or squeezing to extract as much liquid as possible and remove pulp.
05 - Taste and, if needed, adjust sweetness with additional agave or acidity with a splash more lime juice. For a sparkling variation, fold in chilled sparkling water at this stage.
06 - Serve over glasses filled with ice, garnish with cucumber slices, lime wedges and mint sprigs. Keep refrigerated and consume the same day for peak freshness.
